Pancakes with a Twist (of Orange)

After coming back from Paris, my sleep schedule is still a bit confused although in a good way. I have been sleeping earlier and waking up earlier as well. Usually, waking up before the break of dawn would give me a airy feeling and make me a bit queasy in the morning, but I look forward to it lately and plan to keep this pattern up.

Part of my early morning ritual is to decide on what to eat for breakfast and make it. I sill have an abundance of eggs, but I don't have any milk or bread. While lying awake in bed, I thought of what I could eat with the eggs if not bread... The idea of pancakes or waffles came to mind but I didn't have any milk either. Aside from water, the only other liquid I have in stock is orange juice.

Since it is still too early to run to the store, I decided to get creative and use the orange juice. Surprisingly, these pancakes were very tasty and somewhat resembles an orange creamsicle when eaten with some maple syrup.


2 Cups of AP Flour 
1 tsp Salt (scant) 
2 tsp Baking Soda (Scant) 
2 eggs
1/4 Cup Butter (melted)
1/4 Cup of Sugar 
1 3/4 Cup of Orange Juice
1/4 Tsp Vanilla Bean Paste 

-Combine all ingredients. 
-Mix until smooth. 
-Heat of non-stick pan with a little bit of oil on medium low heat
-Cook each side until golden brown
